Okay, I’m the first to admit that fish soup isn’t all that high on most westerner’s yum-yum scale, but this one is different. The sake and sweet onion perfectly complement the mild white fish and, together with the miso, dial down the fishiness factor to almost nothing, even with the wakame. The flavors are surprisingly rich and full-bodied and the nutrition density is high for such a light dish. This delicious soup is very easy to make with a short cook time –a perfect centerpiece for a warm weather meal.
