Pumped Up Pesto

Pesto is a great way to add a little zest to plain veggies as a snack or simple pasta, fish or steamed vegetables as an entree. It’s ultra-easy to make. This basic pesto recipe is very flexible and can be made with many different kinds of greens, nuts and oils. For some variety, try swapping out the basil for fresh cilantro and lime juice for the lemon. You can also use baby rocket arugula in place of the spinach for a peppery bite, or walnuts for pine nuts to lend a pleasant bitter flavor note.
