No-Flour Crepes

Crepes are a culinary delight you don’t have to forego even if you’ve given up all flours and grains. These lovely paleo crepes are light, delicious, versatile and super-quick to make.  To make more than one, remove any residual egg and simply re-oil the pan – you may have to reduce the burner heat to prevent the oil or butter getting too hot and smoking. You can make sweet or savory stuffed crepes, depending on the fillings you choose. Using fresh fruit and a little organic, pastured cheese or coconut yogurt (for dairy-free) can turn them into blintzes. Using chopped veggies and additional proteins can turn them into entrée crepes.
