Broccolini has all the nutritional benefits of the high-powered crucifers, but it is sweeter and slightly more tender than broccoli – perfect for raw preparations. This loaded pesto is mild and satisfying, with a lower oil content than store-bought pestos. The feta is optional, but adds a nice piquancy to the finished dish. Try it tossed with zucchini pasta, spooned over roasted tomatoes or as a dip for crudites for a veg-on-veg entree or app.
