These muffins are SO easy make ~ just throw the ingredients into a blender, pour, bake and eat! Or freeze them. They are so high in protein and so low in calories that they make a really good grab-and-go breakfast or post-workout snack. To freeze them, cool on the counter and then chill completely in the fridge. Arrange in a single layer in a gallon-size zip closure freezer bag and press the air out. Remove one at a time and microwave for about 20 seconds or toast to thaw before eating.
